Breakfast by Jackie





A day after Brittany and Brooke left my Mom arrived. She has been a life saver! I forgot how much time it takes to simply feed and change a baby. A person could literally spend all day taking care of a new little one. Forget getting other kids fed, or clothed, or to school, or anything else. Mom has been so good to hold the baby and let me sleep, shower, or run a quick errand. Her help was especially appreciated this week because all the kids activities were starting. She stayed with the baby so I could take Ethan to his first competition soccer practice AND then take Jacob to his special needs pre-school open house. It was a crazy week.

Another benefit of having Mom here is she makes amazing breakfasts! The whole family has enjoyed her culinary expertise. Breakfasts included: cinnamon swirl pancakes* (recipe below), stuffed french toast, eggs benedict, and homemade orange knot rolls. Yummy!

Cinnamon Swirl:

2 Tablespoons melted butter
1/4 cup brown sugar
1 teaspoon cinnamon
1 Tablespoon flour

Add swirl mixture to your favorite pancake recipe once on the griddle.
